| Paris Cooking Classes
Chef Eric FRAUDEAU is your host and instructor in all of these programs described below. Chef Fraudeau has more than 20 years in the industry and has worked under Joel Robuchon and Alain Ducasse and has also worked in 4 star hotels in Mexico, Canada, and the USA. He speaks bilingual French and English and conducts all classes in English. The programs are fun and casual, an ambiance meant to give simplicity and joy to cooking! All programs are hands on, and include all materials necessary.

Goat cheese salad with rosemary

Sautéed scallops, saffron cream sauce and endives with honey
Moelleux au chocolat
Caramel Poached Pear
Chocolate and vanilla Crème Brulée
Honey Madeleine
Monkfish with mussels, and cream curry sauce
Marinated quails with spices
Wild Mushroom salad
Full Day Class - 7 Hours:
The class starts with a visit to the market for seasonal ingredients and fresh produce. You will learning how to select fresh products and meet local merchants to whom you can ask questions and overcome any apprehension aoub shopping the French markets. Back at the school there is a brief discussion about the day's menu and ingredients. You will get an apron and a review about how to handle a knife safely. After lunch (included), you will have a short break and then it starts again on a gourmet meal that you will take home with you. The meal to take home will be sufficient for 2 persons.
Morning Market Class - 4 Hours:
The class starts with a visit to the market for seasonal ingredients and fresh produce. Cooking for about 2 hours followed by lunch with a good wine.
Cheese & Wine Tasting - 2 Hours
A fine experience to select cheeses from local merchant. The focus of the class is to learn which wines are best with which cheese. French jams and other preserves that are normally paired with cheese will also be provided and of course will not forget the bread! Tues night only!
You meet Chef Fraudeau in the 18th arrondissement at the Metro Jules Joffrin. The location for the classes is a private studio just 5 minutes from Sacre Coeur. The studio has a lounge area where you can sit and relax before class, have adrink of water, wine, or coffee. The space is function but is comfortable and is meant to feel homey. You will eat what you prepare! Cooking usually last about 2 hours followed by dining with a good wine of course!
